LETTUCE SOUP


This summer is fantastic. Every thing grows like mad and so does the lettuce. Summer abundance, and once again we discover that we planted to much of the same in one go. We have supplied all neighbours, that is the once who did not plant any themselves, and friends and family.....So what to do with all those fine heads of lettuce which will go to flower any day now?. Let's make soup!! Below the recipe from an absolutely delicious soup, you can even use the leaves of the plants that have already shoot up, they give the soup a slightly bitter taste which gives it a bit of  body, the chilly pepper gives it nice 'kick' . Enjoy!!


LETTUCE SOUP

For four persons.

½ litter vegetable stock

3 big cloves garlic

½ cm fresh ginger

Bit of chili pepper

Blob of cream

2 or 3 heads of lettuce

Heat the stock with the garlic, the chopped ginger and the chili pepper until the garlic is soft.

Ad the cream and the washed en chopped lettuce and bring back to the boil and take it strait from the fire.

Liquidise and serve.

At Hagal Farm we serve this soup with a bit of Hagal salad dressing (see next entry's recipe) which is made of fresh tomato and sunflower oil. A nice blob of red in the centre of the bowl of soup adds to both the taste buds and the visual presentation.

Serve with some yummy fresh spelt scones.

    I've just found your blog through a fellow blogger.
    I made some lettuce soup three years ago with bolted lettuces. It was incredible. You've reminded me how good it is. I like your idea of adding a bit of chili pepper, I will def. try it as I like food with a little kick! Kind regards.

    I do not remember ever hearing of lettuce soup, but why not. From the list of ingredients it sounds quite delicious.
