At Hagal farm food is an important part of living. It has to be fresh, it has to be organic, it has to be prepared with knowledge and most of all...love. In other words; cooking a meal at Hagal farm for the family and guest is pure fun.
Fred prepares most of the food and he is so good and successful at it, that regular cookery weekends, where guests and other interested people can participate, started to get organised.
Fresh vegetables out of the garden of Hagal is a must and adds lots of flavour to the meals
At the time that Janny and Fred made there trip around Europe, son Frank took over the kitchen and is now a permanent part of the staff. Frank has a lot of experience in preparing good food. Of course growing up and giving a hand at Hagal Farm helped, but he also gained a lot of experience through running a restaurant in Bantry town for two years. He 'grew' into a very good and creative chef. Besides being good at cooking, Frank is also a successful musician and preforms with his band 'The Calvinists'
around West Cork.
In the next couple of months Fred and Frank will give some special Hagal recipes on this blog.
As a lot of people have a wheat intolerance or allergy, we start with the popular White Spelt Scones.
1 lbs white spelt flour
1 level tea spoon baking soda A
1 teaspoon salt
pinch of turmeric (optional, but gives it a lovely golden colour!)
3/4 pint buttermilk
1 egg, (the egg should be included in the total amount of fluids) B
Mix ingredients A
Mix ingredients B
Mix A and B.Mix it light ,don't knead it.
Place on a floured board and stamp the scones.
Put some egg was on top.
Bake in hot oven (200 c ) for 15 min.
Serve with butter and /or home made jam and enjoy!!
